[www.keralites.net] TODAY'S RECIPE - Fruit Cake Rolls

 

This recipe is very easy and makes a great dessert for company or family -It works out great frozen and delicious served with chocolate, caramel or strawberry sauce and whipped cream on top of each serving. Other fruit such as any pie filling of just prepared pudding mixed with cool whip can be used for filling also. I have used coconut cream pudding and extra coconut and chopped nuts too- very good! Note: If you want to skip making the cake portion from scratch try using my Duncan Hines angel food cake mix idea.

Ingredients

ROLL:
4 large eggs, separated
3/4 c granulated sugar, divided
1 tsp vanilla extract
3/4 c cake flour
1/4 tsp salt
1 tsp baking powder

FILLING:

3 oz pkg. instant banana pudding
1 1/2 c milk
combine pudding and milk, beat well until it starts to thicken place in refrigerator until ready to use.
2 or 3 bananas, peeled and left whole**
For garnis strawberry, chocolate or caramel topping

Directions

1. Preheat oven to 375. Line the bottom a jelly roll pan (15x10x2-inches) with a good wax paper.

FOR THE CAKEl: Beat egg yolks until thick and lemon-colored; gradually beat in 1/4 cup sugar and the vanilla.

2. Beat egg whites until almost stiff; gradually add remaining sugar and beat until very stiff. Fold yolk mixture into whites, them add sifted dry ingredients, folding in carefully by hand with large spatula.
Pour into jelly roll pan and bake in oven for 12-15 minutes

3. When done, remove from oven and loosen sides. Turn out onto towel sprinkled with powdered sugar.
Remove wax paper from bottom of cake carefully. Trim off crusty edges to make easy rolling.
Roll quickly with a fresh sheet of waxed paper on inside of roll. Wrap in sugared towel; cool.

4. Unroll, remove paper; spread with pudding.

5. TO ASSEMBLE: Place 2 or 3 straight bananas near edge (2 inches) of long side of roll and roll up again. Be sure to use bananas that have absolutely no black or brown specks on them and that they are not too ripe, but still slightly hard.

6. Place seam side down on serving platter. Chill slightly (20 minutes). Serve with any extra pudding and a scoop of ice cream with ice cream topping over all if desired. VARIATION: Try a strawberry roll too: I used fresh strawberries a little French vanilla instant pudding (dry) and cool whip to make a fluff spread on the inside. Delish!!

But please tell me the followings.
 
1. Does Gujarat have Strikes / hartals every month (No.)
2. Can you find youths fighting in streets and destroying public properties and police WATCHING it. (No)
3. Can you find students union striking for no reasons in Gujarat (No)
4. Is there power cut in Gujarat (No)
5. Can you find damaged roads (especially National Highways) in Gujarat (No)
 
Due the above and more reasons You cannot compare Gujarat with Kerala. As Kerala has it own identities which nobody (even god) cannot change.
 
If you want Kerala to be like Gujarat (It will remain a dream even after few generations). So better go to Gujarat.
 
This is my personal opinion and frustruations.

Very interesting article by Dr. MC Gearge, Advocate from Muvattupuzha, who has visited Gujarat with few farmers from Kerala. He recommends that every progressive politician from Kerala should visit Gujarat and ascertain by himself that what Gujarat Government with Narendra Mody's leadership doing there. He is creating miracles there.
